I ended up picking Keith Carter for my artist presentation. He has some really beautiful work which you can see at his website. There's also a nice video of him speaking about his work at the Catherine Edelman Gallery.
Another artist I came across was Tom Chambers. He does some really wild fantasy photography with very vibrant colors.
This project reminded me of another photographer I enjoy: Imogen Cunningham.
